Cooking & Baking With Stevia
the recipe for sweet success


Our mouths are used to the taste and texture of sugar. In order to use an alternative effectively we have to realize stevia's limitations and where it excels so that we can use it to our greatest benefit.

When using stevia in foods you must remember that it is not only a sweetener but also a flavour enhancer. If you use stevia in something with little or no flavour stevia gets "lost" and is ineffective. Where stevia shines is in items with strong flavours (chocolate, lemon, berries, cheese, etc.) In cooking, just substitute for sugar according to the conversion chart.

1 Drop of Stevia Concentrated Liquid is approximately equivalent to 1 Tsp. of Sugar.
½ Tsp. of Stevia Concentrated Powder is approximately equivalent to 1 cup of sugar.

In baking you use the same substitution as in cooking as well as following another requirement.

To make up the volume lost due to replacing 1 cup of sugar with only ½ Tsp.of stevia, we add an additional ingredient, unsweetened apple fiber.

Place unsweetened applesauce in a strainer lined with cheesecloth and let sit in a bowl overnight in your refrigerator. In the morning the sauce will have separated into apple fiber (in the cheesecloth) and apple juice (in the bowl). Add 1 cup of apple fiber in addition to the ½ Tsp. of stevia for each cup of sugar the recipe calls for. You will notice that your recipe will be more fluffy, lighter and moist. Additionally you will be able to reduce the amount of oil in your recipe as well because the applesauce will in part be able to replace it.

Recipes


 

Hot Cocoa
4 Cups Milk
1/3 Cup Pure Cocoa or Instant Carob Powder
1-2 Pinches Pure-Li Natural Stevia Powder Concentrate
2 Pinches Cinnamon Powder
2 Pinches Nutmeg Powder

Slowly Heat milk on stove but do not boil. After hot mix in powders and stir in until smooth. Add a very small amount of STEVIA until desired sweetness is attained.

Chocolate Drop Cookies
1 Sick Butter (1/2 cup) Softened
1/4 Tsp. Pure-Li Natural Stevia Powder Concentrate
1 Egg
½ Tsp. Vanilla Extract
½ Cup Unbleached White Flour
½ Cup Whole Wheat Flour
½ Tsp. Salt
½ Tsp. Baking Soda
1 Cup Rolled Oats
1/4 Cup Chopped Pecans
1/4 Cup Chopped Walnuts
½ Cup Chocolate or Carob Chips

Mix together first 4 ingredients. Gradually add the following ingredients in order. Lightly grease a cookie sheet and drop ½ Tsp. of dough leaving approximately 1 inch in between drops. Bake for 10 minutes in a preheated oven at 375 degrees F.

Hot Breakfast Porridge
2 Cups Water
1 Cup Quick Cooking Oat Flakes
¼ Tsp. Sea Salt
1 Tsp. Cinnamon
12 Drops Pure-Li Natural Stevia Liquid Concentrate
1 Tablespoon Butter
2 Tsp. Vanilla Extract
1 Tsp Flaxseed Oil

Place water in a 1-quart pot and bring to a boil over medium high heat. Add oat flakes, salt, cinnamon, stevia, and butter. Reduce the heat to low and simmer for 10 minutes.

Remove pot from the heat and allow oatmeal to cool slightly before adding vanilla extract and flaxseed oil.

Sweet Mustard Sauce
4 Tablespoons Dijon Mustard
1 Tsp. Dry Mustard
10 Drops Pure-Li Natural Stevia Liquid Concentrate
2 Tablespoons Apple Cider Vinegar
½ Cup Extra Virgin Olive Oil
1 Tsp. Dried Dill

Whisk the mustard, dry mustard, stevia and vinegar together in a medium size bowl. Slowly add the olive oil while continuing to whisk until thickened. Stir in dill. Cover and refrigerate at least 1 hour.

Better Maple Syrup
¾ Cup Pure Water
2 Tablespoons plus 2 Tsp. Pure Kosher Vegetable Glycerin
2 Tsp. Maple flavouring
1/8 Tsp. Pure-Li Natural Stevia Powder Concentrate

Combine all ingredients and mix well (in a small bowl, or in a food processor). Warm the mixture in a small pan before drizzling over pancakes, waffles, hot cereal, or deserts.

Sweet Whipped Cream
1 Pint Whipping Cream
1/8 Tsp. Pure-Li Natural Stevia Powder Concentrate

Place the whipping cream in a mixing bowl and beat with a whisk or electric hand held mixer until it begins to thicken. Sprinkle the stevia over the cream and continue to beat until soft peaks form (do not over beat). Use immediately or place in an airtight container and refrigerate for a maximum of two days.

Very Vanilla Ice Cream
2 Egg Yolks
2 Cups Heavy Cream
1 Cup Soy Milk
2 Tsp. Vanilla Extract
½ Tsp. Pure-Li Natural Stevia Powder Concentrate

In a blender or food processor whip all ingredients very thoroughly then refrigerate for 1 hour. Pour the chilled mixture into an ice-cream maker and follow directions for freezing.

For a fun treat add fruit (blueberries, strawberries, banana, raspberries, cherries or cranberries) once mixture is semi frozen, then complete the freezing process.
